
The Cinta Senese is an ancient breed of pig exclusive to our territory. Records of its breeding date back as far as the Middle Ages, but it was subsequently aban-doned. Centuries later, the outstanding virtues of the breed, characterised by very compact muscle mass, thanks to the fact that it is farmed in a semi-wild state, were rediscovered. The meat of Cinta Senese pigs is PDO certified: each animal undergoes strict controls and, in compliance with regulations, each farm must have a specific amount of woodland area per pig. The animals' diet consists mainly of tu-bers, acorns and forest products and is only partially supplemented with selected feed. Consequently, even the fat of the Cinta Senese has beneficial organoleptic qualities, scientifically recognised by dedicated studies.
We process these fine meats, producing prosciuttos and charcuterie of the highest quality, and have recently added some grilled meats, processed using the same techniques as those used for our other charcuterie products, but with different results, with a unique and surprising flavour.
